1¼ c. sugar
½ c. margarine, softened
2 eggs
1½ c. mashed banana
½ c. buttermilk
1 tsp. vanilla
2½ c. flour
1 tsp. baking soda
1 tsp. salt
3⅓ oz. macadamia nuts, chopped and toasted
½ c. flaked coconut

Directions:
Directions:
Heat oven to 350º. Grease bottom of 9x5x3” loaf pan. Mix sugar and margarine in large bowl. Stir in eggs until well blended. Add buttermilk and vanilla. Beat till smooth. Stir in flour, soda and salt just until moistened. Stir in nuts and coconut. Pour into pan. Bake 75 minutes. Cool 5 minutes. Loosen from sides of pan and cool.
