Salad Oil
2 Eggs; slightly beaten
1 cup sugar
1 cups flour
1 tsp Baking Soda
tsp Salt
1 tsp Cinnamon
1 tsp Vanilla Extract
1 cup Carrots; finely grated
cup nuts chopped or coconut

Preheat oven 325F

Directions:
Directions:
Cream together salad oil, eggs and sugar.
Sift dry ingredients; add to salad mixture along with vanilla
Mix well.
Add carrots and nuts
Bake in greased and floured loaf pan at 325F for 1 hours

Will keep if well wrapped and stored in refrigerator.
