Plum Pudding


Ingredients:

lb (1 cups minus 2 Tbsp) bread crumbs
1 lb seedless raisins
6 eggs ( more if mixture is dry)
lb suet ground ( 1 cup)
lb citron ground (1 cups)
lemon rind grated
lb sugar ( 1 cup)
tsp cinnamon
tsp nutmeg
sherry, wine or brandy
lb almonds chopped fine

Directions:
Directions:
Mix bread crumbs and raisins in a very large bowl. Add all other ingredients and mix well. It will be a very heavy batter that sticks together. Steam in wax paper lined 2 lb coffee can, lined with cheese cloth, covered. ( Eileen uses the reusable plastic cap) for 3 hours.
Let ripen for a couple of weeks in refrigerator.
 

Hard Sauce


Ingredients:

1/2 cup butter
1 cup or more of powdered sugar
1/2 tsp nutmeg
brandy, whiskey or wine

Directions:
Directions:
Soften butter and beat in powdered sugar, nutmeg. Start with 1/4 cup of brandy to thin and flavor. Add more as needed. Refrigerate if prepared in advance. Let stand at room temperature for at least 15 minutes before serving.

Steam the Plum Pudding for 2 hrs in tin to heat before serving. Remove from can using cheese cloth to lift out.
Pour brandy on warmed cake that has been turned out onto a serving dish. Light the liquid brandy on the plate, and bring flaming plum pudding to table for a spectacular desert!
When the flame dies down, serve warm with a dollop of the prepared hard sauce for a traditional Christmas desert! This is a wonderful and delicious family tradition to continue to pass down. It connects Christmas's past and those who are no longer with us, to our present day celebrations.

This recipe has been in the family for generations. It has been passed down from Nana Martin. Aunt Eileen has continued the tradition, making the plum pudding for each family at Christmas. It has always been a favorite traditional desert that we serve at a large family gathering during the Christmas holidays.
