"I have long believed that good food, good eating is all about risk. Whether we're talking about unpasteurized Stilton, raw oysters or working for organized crime 'associates,' food, for me, has always been an adventure."--Anthony Bourdain

Ingredients:
3/4 cup sugar
1/3 cup flour
1/4 teaspoon salt
2 cup milk
2 eggs, separated
1 teasppoon vanilla
Vanilla Wafers
2 large bananas, sliced

(See "Personal Notes" below if you prefer to increase vanilla pudding ingredients)

Directions:
Directions:
Blend 1/2 cup sugar, the flour and salt thoroughly together. Add 1/2 cup milk, stirring to make smooth. Add remaining milk. Cook, stirring constantly, until thickened. Beat egg yolks slightly. Add some hot custard slowly to yolks. Return to pan, and cook 2 minutes. Remove from heat. Add vanilla. Line the bottom and sides of a baking dish with vanilla wafers. Arrange bananas in layers on bottom. Pour custard over bananas.

Beat egg whites until stiff but not dry. Add remaining sugar 1 tablespoon at a time, beating constantly. Spread meringue over custard, [spreading meringue slightly over edges of bowl or pan to keep it from shrinking when browned.] Bake in moderately slow oven (about 325) until browned. Serve hot or cold. Serves 8.

Personal Notes:
Personal Notes:
This was Daddy's favorite dessert. He liked extra vanilla pudding, as opposed to wafers (more creamy, less dry), so I always multiplied the pudding ingredients by 1-1/2 . By increasing the bananas slightly, I could make two layers of wafers, pudding and bananas.
