2 ½ cups red or pink lentils
5–6 cups of water (a large pot half full)
2 Tbsp. curry paste
½ cup coconut milk
1/3 cup water
1/2 tsp. salt
¼ tsp. black pepper
¼ tsp. cayenne
2 tsp. curry powder
½ tsp. turmeric
1 tsp. chili powder
2 Tbsp. sugar
Lime juice
Green herbs for garnish (I used cilantro, green onions, etc.)
Prepared rice

Directions:

1. Bring the water to a boil in a large pot.
2. Add lentils and cook uncovered for 10 minutes, stirring every few minutes to prevent burning on the bottom. Remove from heat.
3. Stir in remaining ingredients until completely incorporated. Season with additional salt and herbs for garnish.
4. Serve on top of prepared rice.
