Ingredients: Flour tortillas (not taco size, get burrito or enchilada) Canned or pulled chicken meat Mexican shredded cheese at least 2 cups. Probably 3 total Jar of salsa ( can be mild, medium or hot) Sour cream 8 oz Cream of chicken soup. Large can Dry enchilada seasonings or fajita seasonings Fresh green onions

Directions:In a large bowl mix cream soup, sour cream and jar of salsa Have chicken meat drained and shredded and ready Plop some sauce and spread across bottom of casserole dish. Not a lot just a thin swipe. Lay out tortillas and fill below center line,not all the way to edge, with chicken meat. Sprinkle seasonings on top. Add cheese mixture. It can be whatever cheeses you like. Pull sides in first and flip front lip up and roll that baby tight like a joint and place seam side down in casserole dish. Continue till all tortillas are done. Usually 8 fill the pan. Cover all the tortillas completely with the remainder of sauce. Sprinkle with shredded cheese. Bake uncovered 325º for about 30-45 minutes until sauce gets bubbly and cheese is all melty Sprinkle with sliced green onions Serve with rice |

Notes: This is a yummy way to go Mexican! Dad really likes this dish considering he cannot have corn tortillas anymore. I started making this in our later years as a family.
