1 tbsp Avocado oil (or any oil of choice)
1 large Onion (chopped)
10 oz Mushrooms (sliced) or sliced fresh mushrooms
2 lb Green beans (cut in half, making shorter pieces)
3 cups Homemade cream of mushroom soup - recipe in book

Topping
1/2 cup Blanched almond flour
2 tbsp Dried minced onion
1 tbsp Avocado oil (or any oil of choice)

Directions:
Directions:
Make dairy free mushroom soup if you don't want dairy in recipe.

Saute mushrooms and onions. Once they are lightly browned, remove the pan from the heat.
Cook the green beans. You can either cook the green beans in the microwave or on the stovetop, just until crisp-tender. We don’t want them mushy!
Assemble the casserole. Place the cooked green beans in a casserole dish. Then top with mushroom and onion mixture and cream of mushroom soup.
Make the green bean casserole topping. Place the almond flour and minced onions together. Pour in oil and mix until crumbly.
Top the green bean casserole. Sprinkle the topping evenly over the casserole and bake until the topping is golden.
