Nancy Hall

Meatballs (doubled for two recipes) freeze half
2 small onions grated/processed
2/3 c fresh parsley chopped
2 eggs
2 tsp minced garlic
2 tsp salt
2 slices bread in small pieces
1 c parmesan cheese grated
2 lbs ground turkey or chicken
dash pepper

6 c chicken broth
6 c beef broth
1 lb chopped spinach
Salt and Pepper to taste
1/4 c small pasta like stars or orzo

Mix all ingredients and form dime-sized balls. To freeze half for a second soup, place balls on a metal cookie sheet and freeze. Then put in freezer bag and they won't stick together. Add broth, meatballs, pasta and salt and pepper. Cook until meatballs are done. Chop up spinach and add before serving.
