3 ½ cups rolled oats
½ cup coconut sugar
½ cup dried fruit (apricots, figs, dates...)
½ cup raisins
½ cup ground flaxseed
½ cup raw pumpkin seeds
½ cup cooked quinoa
4 Tbsp chia seeds
½ tsp baking soda
½ cup maple syrup or honey
1 cup coconut oil
1 tsp vanilla extract
⅓ cup unsweetened applesauce

Preheat oven to 350º. Lightly grease mini muffin pans. Pour 2 cups of rolled oats into a food processor. Process for about 1 minute until oats become flour consistency. Add in remaining oats, sugar, dried fruit, raisins, flaxseed, pumpkin seeds, quinoa, chia seeds, and baking soda. Pulse until dried fruits are in small bits. Pour in syrup, melted coconut oil, and vanilla. Add applesauce and pulse until just combined. Press the dough into prepared muffin tins. Bake for 10 minutes. Store in an airtight container.

Dough may be stored in freezer for later use.
