2 egg yolks
1¾ cup milk
½ cup vegetable oil
1¾ cups all purpose flour
1 tbsp baking powder
½ tsp salt
2 egg whites
Berry sauce:
11oz frozen unsweetened raspberries
11oz frozen unsweetened blueberries
1 cup sugar
2 tsp lemon zest
1½ tbsp cornstarch
1-2 tsp fresh lemon juice

Directions:
Directions:
Combine berries, sugar and lemon zest in medium bowl; let stand at room temp for 1-2 hours or until berries are defrosted. Strain berries thoroughly and transfer all juices to medium saucepan. Whisk in cornstarch. Bring juices to a boil over high heat. Cook mixture whisking constantly until thickened, about 2 min. Transfer to bowl. Cool 15 min. Mix berries into thickened juices. Add lemon juice and stir. Set aside until ready to use. May need to warm before serving.
In small mixing bowl beat egg yolks with fork. Beat in milk and cooking oil. In large mixing bowl stir together flour, baking powder, and salt. Add egg mixture to flour mixture all at once. Stir mixture till blended but still slightly lumpy. In small mixer bowl beat egg whites till stiff peaks form. Carefully fold egg whites into egg-flour mixture. Leave a few fluffs of egg whites. DO NOT OVER MIX. Lightly grease the waffle baker if needed. Preheat. Pour batter onto grids of preheated baker. Close lid quickly and don't open during baking. Remove waffle from baker with a fork. Serve with warm berry sauce or real maple syrup and butter.
