1 1/2 c flour
1 tsp baking soda
1/2 tsp salt
1 tsp cinnamon
2 Tbsp buttermilk powder
3/4 c brown sugar
1/2 c canola oil
1/2 c. milk
1 egg
1/2 tsp vanilla
2 c diced rhubarb
1/2 c pecans chopped
cinnamon sugar

Directions:

350º
Grease 8" x 4" loaf pan or 16 muffin tins
Whisk dry ingredients
Add wet ingredients to dry and mix thoroughly
Fold in rhubarb and pecans
Put in pans
Top with cinnamon sugar
Bake 50-55 minutes for loaf
30-35 muffins
Cool slightly before removing from pan.
Cool completely before slicing
