4 T unsalted butter
4 c chopped yellow onion or 2 large
1/4 c flour
1/4 tsp grated nutmeg
1 c heavy cream
2 c milk
5 10 ounce packages frozen spinich
1 c freshly grated Parmesan cheese
1 T salt
1/2 tsp pepper
1/2 c grated Gruyere cheese

Directions:
Directions:
Melt butter in a heavy bottom pan over medium heat, add onions and sautee 15 min. Add flour and nutmeg. cook 2 minutes. add cream and milk and cook until thickened.

Squeeze all liquid from spinach and add to the sauce. Add 1/2 cup of Parmesan cheese and mix well. Season with salt and pepper

Transfer the spinach to a baking dish and sprinkle with remaining Parmesan and Gruyere on top. Bake for 20 minutes at 425
serve with tortilla chips
