3 eggs
2 c sugar
2 c grated zucchini
2 tsp vanilla
3 c flour
1 tsp salt
2 tsp cinnamon
1 tsp baking powder
1tsp baking soda
1/2 c nuts or rasins optional
Directions:

350º
Beat eggs and sugar until light & fluffy
Add next 5 ingredients and mix well
Mix dry ingredients.
Add to wet and mix well
Pour into 2 9" x 5" pans
Bake 1 hour
