49½oz chicken broth
1¼ cups Schlafly Pale Ale, divided
2 cups diced onion
2 cups diced celery
2 cups diced carrots
2 cloves garlic, minced
1 bay leaf
1 tsp black pepper
½ tsp cayenne pepper
½ tsp thyme
¼ tsp ground nutmeg
1 cup butter
1 cup flour
3 cups 40% gourmet heavy whipping cream
12oz shredded white cheddar cheese
1 tsp salt

Directions:

In large stock pot, combine chicken broth, 1 cup of ale, onion, celery, carrot, garlic, bay leaf, peppers, thyme, and nutmeg; bring to a boil. Reduce heat and simmer for 30 min. In small saucepan, melt butter. Stir in flour to form roux; cook for 10 min. Stir roux into broth; bring to a boil and cook for 5 min or until slightly thickened. Add cream and cook until heated through. Remove from heat and stir in cheese. Season with salt to taste. Ladle into bowls and top each with about 1 tsp of the remaining beer'
