½ cup olive or avocado oil
⅓ cup Dijon mustard
⅓ cup red wine vinegar
Salt and pepper to taste
2 lbs mini red skinned potatoes
1 medium yellow onion, cut into about 1 inch chunks

Directions:
Directions:
Preheat grill to medium heat. Beat oil, mustard, vinegar, salt, and pepper until blended. Reserve about ¼ cup of mustard mixture for later use. To remaining mixture add potatoes and onions. Place onto greased double thickness foil and seal into a packet, leaving some room for heat circulation. Grill 30-35 minutes, turning packet every 10 minutes. Add reserved mustard mixture and mix.
