2 skinless, boneless chicken breasts, cut into bite sized pieces
½ t salt
¼ t pepper
2 T cornstarch
¼ cup oyster sauce
2 tbsp soy sauce
1 tsp sugar
¼ t red pepper flakes
3 cloves garlic, minced
1 T fresh grated ginger
¾ cup chicken broth
1 T rice wine vinegar
1 T canola oil
1 T sesame oil
4 cups broccoli flowerets
1 small red bell pepper, seeded and cut into strips
1 medium onion, cut into chunks
⅓ cup cashews
2 t toasted sesame seeds

Put chicken pieces in a medium bowl and sprinkle with salt, pepper and cornstarch. Stir to coat chicken. Set aside. In another medium bowl combine oyster sauce, soy sauce, sugar, red pepper flakes, garlic, ginger, chicken broth and rice wine vinegar. Whisk together and set aside. Heat the canola and sesame oil in a wok over med-high heat. Add chicken and stir fry until no longer pink. Add onion to wok with chicken and stir fry 2 min. Add in broccoli, red pepper strips and the chicken stock mixture. Cook stirring another 3-4 min until sauce thickens a bit and broccoli is just tender. Sprinkle with sesame seeds and cashews and serve immediately with white or fried rice.
