2½ cups old-fashioned rolled oats (not quick cooking)
1½ cups wheat germ
½ cup sweetened shredded coconut
3 Tbsp. sesame seeds
⅓ cup raw sunflower seeds
½ cup chopped walnuts
½ cup sliced almonds
2 tsp. ground cinnamon
1 tsp. kosher salt
¾ cup canola oil
¾ cup honey
2 tsp. vanilla extract
½ cup dried cranberries

Position a rack in the center of the oven and preheat to 350º
Line a baking sheet with parchment paper.

In a large bowl, combine the oats, wheat germ, coconut, sesame seeds, sunflower seeds, walnuts, almonds, cinnamon and salt and mix well. In a small bowl, whisk together the oil, honey and vanilla. Pour the wet ingredients over the dry ingredients and mix until the dry ingredients are evenly coated.

Pour the mixture onto the prepared baking sheet and spread in an even layer. Bake for 20-30 minutes or until golden brown. Stir the granola several times with a spatula several times during baking to ensure even browning.

Let cool completely, then add the cranberries and distribute them evenly. Store in an airtight container.
