1½ cups unsalted butter softened
3 cups sugar
6 large eggs at room temperature
¾ cup sour cream
1 oz red food coloring
2 tsp. vanilla
3¾ cups flour
¾ cup cocoa
1 tsp. salt
1 tsp. baking powder
1½ cups of buttermilk at room temperature
3 - 9" round cake pans greased and loured and lined with parchment paper and greased

Preheat oven to 350º.

In large bowl, beat butter and ½ sugar at high until fluffy, stopping to scrape down. Add eggs 1 at a time beating after each. Add sour cream, food coloring, vanilla, and beat to combine.

In medium bowl whisk together flour, cocoa, salt and baking soda. With mixer on low, add flour mixture to butter mixture in thirds, alternating with buttermilk; beginning and ending with flour mix. Pour into pans and bake about 25 minutes until toothpick comes out clean. Let cool 10 minutes then remove from pans and cool completely. Frost with cream cheese icing.
