French Onion Chicken Recipe

4 thin sliced chicken breasts
2 medium yellow onions sliced in rings
3 tbsp. butter
1 cup+ 3 tbsp. beef broth, divided
1 tbsp. olive oil
salt and pepper
1 tsp Italian seasoning
2 tbsp. flour
4 slices swiss cheese
4 slices provolone cheese
¾ cup grated parmesan cheese

Melt butter in an oven safe skillet. Add onions and 3 tbsp beef broth. Saute 3-4 minutes until onions are translucent. Continue to cook 15 minutes longer until onions are browned. Transfer to a bowl and keep warm.
Drizzle chicken with olive oil and season on both sides with salt, pepper, and Italian seasoning. Cook chicken in the same skillet as the onions until brown, about 4-5 minutes per side. Transfer the chicken to a plate. Add onions back into the skillet, sprinkle flour over the onions and cook over medium high heat for 1 minute. Add the remaining beef broth and bring to a boil. Return chicken to the pan, spoon sauce over each piece and top each chicken breast with a slice of Swiss and Provolone cheese, and parmesan. Transfer skillet to a 400º oven and cook for 10 minutes until chicken is done and cheese is melted. Garnish with fresh thyme and parsley
