Ingredients: You will need:
Wonton wrappers For The filling: 1 pound Ground pork or Ground chicken 2-3 finely chopped mushrooms 1-2 Garlic cloves 1-2 finely chopped green onions 1 small tin of chopped water chestnuts 2 Tablespoons soy sauce Salt and Pepper
Vegetables to add to the soup: Carrots Onions Bok Choy Broccoli
Other: Thinly sliced pork, beef, or chicken

Directions:Finely chop the filing ingredients; combine all the filling ingredients and smoosh it together. Take one wonton wrapper and wet the edges, and place about 1 teaspoon of filling in the middle of the wrapper. Create a triangle and pinch together. Take each “wing” and wrap and pinch the wing around the back of the wonton. Make all; if you have filing left over, just get more wrappers as you can freeze the wontons and make soup at a later time. Put the wontons on parchment paper that is sprinkled with flour but do not leave them on the paper for a long time – make just before you will be eating as the wontons stick very quickly.Prepare all the vegetables that you want to use; fill your pot about 1/2 way with broth, add the wontons and when they begin to float to the top; they are almost done. Add the vegetables and meat if you are using, bring to the boil, turn the heat off, and take pot off the stove.
Garnish: Chopped green onion
To Serve: Put soup in bowls and sprinkle chopped green onion. |

Notes: This is Uncle Paul’s favorite soup! When I was looking after them in 2018 and 2019; I think I made 10 pots of the soup and had frozen bags of wontons for them to enjoy later. One thing I learned was to use Pho Broth but make your own as the store bought one has lots of salt. To make the Pho Broth you need pork bones, roast them till they are crispy, then put in a pot with onions, carrots, celery, garlic, and spices and boil for several hours. Strain into jars and refrigerate until ready to use.
