2 tsp olive oil
1 small onion, chopped
3 cloves minced garlic
2½ tsp cumin
2 tsp oregano
2 tsp chili powder
1 cup sliced carrots, I used the bag of shredded ones from the produce section
2 cans chicken broth
1 8 oz can tomato sauce
3 cans black beans, rinsed
2 bay leaves
2-4 tbsp. lime juice

Heat the oil and saute onion and garlic. Add other ingredients and spices except for the lime juice. Bring to a boil, reduce heat and simmer for 45 minutes. Use an immersion blender to blend some of the beans or take 1/2 the soup and blend it in a blender, return to the pot. Some of the beans need to be pureed to thicken the soup. Add lime juice, simmer 10 minutes longer.

This is a recipe that came from the Arkansas Democrat-Gazette newspaper. I did adapt the spices to make it more flavorful. I love the black bean soup at Panera Bread, this is very similar. Great with a grilled cheese sandwich.
