4 large sweet bell peppers - red, yellow, or green
1 tbsp olive oil
1 large garlic clove - minced
2 tbsp onion - minced
1/2 cup tomatoes - peeled, seeded, and diced
1 can (15.5 oz) black beans -drained and rinsed
2 cups rice - cooked
1/2 cup water

Directions:

Preheat oven to 375º

Wash peppers and cut off tops 1/4” down. Remove seeds rinse again, and set tops aside.

Heat olive oil in skillet. Sauté
garlic, and onion, until onions are soft. About 5 minutes.

Add tomatoes, black beans, and rice. Mix throughly.

Spoon mixture into prepared peppers and put tops back on.

Add water and peppers to a deep sided pan. Cover and bake until peppers are soft, about 45-60 minutes
