Batter:
3 eggs
1 cup mlk
1 cup flour
Pinch salt

Cheese filling:
1 pound dry curd cottage cheese or ricotta
2 eggs
¼ cup sugar
Pinch salt
½ tsp vanilla
1 tbsp butter
1tsp cinnamon

Beat the batter until smooth. Mix all the filling ingredients in a separate bowl.
Heat 2 small but light fry pans until hot and wipe with Crisco. Place a small amount of batter in frypan and roll around to cover the surface. Cook until it browns on the bottom and flip or turn over.
Turn onto a clean tea towel. Add a couple tablespoons of filling at one end of the circle, fold in the sides and fold up from the bottom.
Bake in the oven until brown or fry on a buttered pan and serve. Freezes well.
Serve with sour cream and strawberries.
