1 pound chicken breasts, cut into strips-I use chicken tenders
2 tbsp. olive oil
2 tsp chili powder
1½ tsp cumin
½ tsp garlic powder
½ tsp oregano
¼ tsp seasoned salt
1 can Rotel
1 onion, sliced into rings
1 red bell pepper, cut in slices
1 green bell pepper, cut in slices

Directions:
Directions:
Put chicken in a 13x9 baking dish. Combine oil and spices, drizzle over chicken and stir to coat. Add Rotel, onions, and peppers, stir to combine.
Bake uncovered in a 400º oven for 20-25 minutes. Serve in flour tortillas with cheese, sour cream and pico de galleo.

I have no idea where I got this recipe but it's good and easy, especially when you're craving Mexican in a hurry!
