2½ lbs boneless, skinless chicken breast
2 stalks celery
6oz chopped walnuts
9 pineapple rings
¼ tsp curry
½ tsp lemon pepper
1 cup mayonnaise
1 cup plain yogurt

Directions:
Directions:
Poach chicken, cool and cut into ¾" cubes. Chop each pineapple ring into 8 pieces. Chop celery. Thoroughly mix mayo, yogurt, spices, walnuts and celery and then add the pineapple and chicken. Divide into 6 portions, plate and serve with your favorite seasonal fruit ( red grapes, strawberries, melon) and on a bed of lettuce leaves. It is best if it is covered and refrigerated for several hours before serving.
