2 cups sifted flour
2 tsp baking powder
1 tsp baking soda
1 tsp salt
2 tsp cinnamon
1 cup oil
2 cups sugar
4 eggs
3 cups grated carrot
1 cup chopped walnuts

Directions:
Directions:
Grease and line pans with waxed paper. Sift flour, baking powder, baking soda, salt and cinnamon. Add sugar gradually to oil, beating well after each addition. Beat eggs until very light. Beat them into the oil and sugar, and keep beating until smooth. Gradually stir in dry ingredients, until thoroughly combined. Add carrots and nuts. Mix well and pour into pans. Bake at 325ºF for 60-65 minutes. Cool 20 minutes before removing from pans. Ice when completely cooled.
Ice with Mom's Cream Cheese Icing.
