1 lb plum tomatoes, cored, and chopped, 2 cups
1½ tsp kosher salt
¼ cup finely chopped red onion
1 tbsp chopped fresh cilantro leaves
1 tbsp fresh lime juice
1 small clove garlic, finely minced
⅛ tsp black pepper
½ -1 jalapeno, seeded, and finely chopped

Directions:
Directions:
Place tomatoes in a large bowl and stir in salt. Let stand at room temp until tomatoes release juices, at least 10 min and up to 30. Add onion, cilantro, lime juice, garlic, pepper, and jalapeño and stir to combine.
