Olive oil
1 Red Pepper
1 Red Onion
2 Garlic Cloves
5 Sausages
1 tsp. Smoked Paprika, heaping
Salt and Pepper, to taste
1 c. Rice
⅓ c. White Wine
2 c. Chicken Stock
╝ c. Green Onion, chopped
1 Tomato, chopped
Parsley, chopped

Directions:
Directions:
Heat 1 tbsp. of olive oil in a large pan, SautÚ onions for 5 minutes or until soft. Add Red Pepper and Garlic, sautÚ for another 2 minutes. Crumble in Sausage meat, cook for 4- 5 minutes. Add paprika salt and pepper.
Add rice. Deglaze pan with White Wine. Add stock and bring to a simmer. Gently simmer for 15- 20 minutes or until the rice is soft. Add green onion and tomato and parsley.
