6 or 7 ripe plum tomatoes (about 1 1/2 lbs)
2 cloves garlic, minced
1 Tablespoon extra virgin olive oil
1 teaspoon balsamic vinegar
6-8 fresh basil leaves, chopped
salt and freshly ground black pepper to taste

1 baguette French bread or similar Italian bread
1/4 cup olive oil
garlic crushed

Chop tomatoes finely. Put tomatoes, garlic, extra virgin olive oil, balsamic vinegar in a bowl and mix add the chopped basil. Add salt and pepper to taste. I taste at this point to make sure seasoning is correct, most of the time I add a little more balsamic vinegar, so balsamic is stronger than others so taste before you add more.

Sometime you can buy at store toasted baguette, take a loaf of baguette or some kind of Italian bread, slice into rounds. Take olive oil and add a little garlic to your taste, take a pastry brush or a teaspoon and spread on bread. Put in the over and toast bread till just begins to turn golden brown. Set oven to 450 once heated put bread on top rack.
