1 T. oil
1/2 c. chopped onion
2/3 c. chopped celery
2/3 c. chopped carrots
3/4 lbs 85 percent ground beef or 1 part pork 2 parts beef
1 tsp salt and 1/4 tsp pepper
1 c. whole milk
Pinch of nutmeg
1 1/2 c. tomatoes
1 c. dry white wine
1-1/4 to 1-1/2 lbs pasta
1 T. parmigiana reggiano cheese and 3 T. butter for tossing with pasta
Directions:
Directions:
In a pan place oil, butter, chopped onion on medium heat. Cook and stir until onion is translucent.
Then add celery and carrots. Cook about two minutes.
Add ground beef, salt and pepper. Crumble meat with fork, stir and cook well.
Add milk and simmer gently, stirring frequently until bubbled away completely add 1/8 tsp nutmeg and stir.
Add wine, let simmer til evaporated then add tomatoes. When tomatoes begin to bubble lower heat to simmer. Cook uncovered apps 3 hours. To keep from sticking add 1/2 c. water whenever necessary.
Toss pasta with 1 T. parmigiana and 3 T. butter, then add sauce.
