1 1/2 c whole wheat flour
1/2 tsp baking soda
1/4 tsp salt
1/2 c butter, room temp
1/2 c brown sugar
1/2 c Cane sugar
3/4 c creamy peanut butter
1 tsp pure vanilla extract
1 large egg, room temperature

Preheat oven to 350ºF
Line cookie sheet with parchment paper and set aside

Use a spoon to scoop the flour into the measuring cup (do not pack down) once full scrape the top with the side of a butter knife to get a level scoop
Mix flour, baking soda and salt into a small bowl

In a medium bowl, cream (with hand mixer) butter, splenda, and brown sugar
Add peanut butter and beat till combined
Add vanilla and egg and beat till combined, scraping down sides as needed
Add flour mixture to the butter mixture and beat till just combined (do not over beat mixture)

Use a cookie scoop to scoop cookie dough onto prepared baking sheet
Use a fork to flatten cookie dough
Bake for 10 to 12 minutes
