Prune Cake (Rose Huddleston) Recipe

Ingredients:

Cream together in a large bowl:
1 c Wesson oil
1½ c sugar
1 c buttermilk

Sift together:
2 c flour
1 t salt
1 t cinnamon
1 t soda
½ t allspice
½ t nutmeg

Add sifted ingredients to the first mixture.

Mix together:
3 eggs
1 t vanilla
1 c stewed prunes, cut in small pieces
1 c chopped nuts

Bake 30-35 minutes in a 350º oven. Then, pour on icing and heat 5 more minutes.

Icing - cook together:
1 c sugar
½ c buttermilk
½ t soda
2 T butter

Use a large saucepan for the icing - mixture foams.Cook 5-10 minutes. Pour over cake. As noted above, heat an additional 5 minutes.

This was my favorite cake when I was young - until she told me the name of it! I insisted I didn't like prunes. I guess I was wrong. (Rose Huddleston was Choc Huddleston's mother. Choc and Billie were lifelong friends of Mom's and Dad's.)
