9 potatoes, peeled and cubed
3/4 c. non dairy sour cream
1/2 c. plain soy milk
3 Tbsp. Blue Bonnet Light butter
Salt and pepper to taste
3 c. shredded non dairy cheddar cheese
1/2 lb. bacon, cooked and crumbled
4 green onions

Directions:
Directions:
Place potatoes in bowl covered with water; bring to boil. Reduce heat, cover and simmer until tender. Drain and place in mixing bowl. Add sour cream, milk, butter, salt and pepper. Beat on low speed until light and fluffy. Stir in 2 cups cheese, bacon and onions. Bake at 350 degrees for 30 minutes.
