leftover mashed potatoes
plain all-purpose flour
1 egg
4 c. boiling water

Directions:
Directions:
(Mash potatoes as would normally and prepare 1 to 2 days before). Amount of flour depends on amount of mashed potatoes you prepare. Add 1 egg to mashed potatoes and mix together thoroughly. Add flour until it is a dough consistency. Roll out on board in dime sized diameter rolls. Cut at an angle approximately 1-inch long. Add to boiling water. Gnocci's are done when they easily float to the surface (approximately 5 to 10 minutes). Drain and serve with your favorite meat and spaghetti sauce.
