1 large or 2 small head of broccoli, steamed for 1-2 min, drained
2 cups cooked, diced chicken breast
2 cans cream of chicken or cream of celery soup
1 cup mayonnaise
⅔ cup half and half
1 tsp lemon juice
¼ tsp curry powder
1½ cup shredded cheddar cheese, divided
½ cup soft breadcrumbs
1 tbsp butter, melted
4-6 large russet baking potatoes, scrubbed and dried

Preheat oven to 425º. Pierce skin of potatoes 4-5 times with a fork. Bake in oven for 1 hour to 1½ hours until soft. Meanwhile grease a 9x13" baking dish. Arrange the broccoli in the prepared baking dish. Place the chicken on top of the broccoli. In a bowl, combine the soup, mayonnaise, half and half, lemon juice, curry powder and 1 cup of the cheese. Pour mixture over the chicken. In a bowl combine the breadcrumbs and the melted butter. Add in the remaining cheese and sprinkle over the top of the casserole. At the last 30 minutes of potatoes baking time, turn oven down to 350º and bake the divan in oven with potatoes for 25-30 min or until heated through. Split potatoes lengthwise at top without going all the way through and fluff up the potato. Add a pat of butter and salt and pepper. Spoon chicken divan over potatoes. Serve
