"The tradition of Italian cooking is that of the matriarch. This is the cooking of grandma. She didn't waste time thinking too much about the celery. She got the best celery she could and then she dealt with it."--Mario Batali

Directions:
In double boiler, put cream and sweetened condensed milk and scald. After skin forms; let sit over low heat while mixing sugar and Karo syrup into a heavy pan and bring to boil; boil for 4 minutes. While stirring, add cream (1/4 cup at a time, slowly drizzling into the pan.) This should take 25 minutes or so to slowly add all the cream to sugar. Turn stove down to medium immediately and let cook while stirring occasionally until a soft ball forms. *Should be a caramel color. Take a small amount out and place in cold water. (or 232 degrees on a candy thermometer). Remove from heat and add vanilla and nuts; pour into a butter 9 x 10 dish. Let set for 12 hours before cutting. Cut and wrap, you can use wax paper or parchments paper. Cut by hand.
