2 cups semi-sweet chocolate chips
1 (14 ounce) can sweetened condensed milk, divided
2 tsp vanilla extract
6 ounces white chocolate
1 tbsp amaretto extract (or flavour of choice)

Line an 8-inch square pan with parchment paper, leaving an overhang on both sides. Do the next two steps at the same time:
1. On a double boiler, melt chocolate chips with 1 cup sweetened condensed milk, add vanilla.
2. In a double boiler, melt white chocolate with remaining sweetened condensed milk.

Add extract flavouring and food colouring.

Reserve about 4 tbsp of chocolate chip mixture and spread the rest into the pan. Add the flavoured fudge on top. Add the reserve chocolate chip mixture here and there and then run a knife at the surface of the fudge to create the marble effect. The faster you do this step, the better because the fudge sets really fast and you won't be able to do the marble pattern otherwise.

Chill for 2 hours or until firm. Use the overhang to get the fudge out of the pan. Cut into squares. Store leftovers covered in refrigerator or freeze them.
