4 pears, peeled, cored, diced
1 c. sugar
½ c. vegetable oil
2 eggs, beaten
1 tsp. vanilla
2 c. flour
2 tsp. baking soda
2 tsp. cinnamon
1 tsp. nutmeg
1 tsp. salt
1 c. raisins
1 c. chopped walnuts

Preheat oven to 325.
Prepare muffin cups by spraying muffin tins or lining with paper cups.

Mix pears and sugar, set aside.
Combine flour, baking soda, cinnamon and nutmeg in another bowl. Set aside.
Blend oil, eggs & vanilla in large bowl using a mixer. Stir pear mixture into egg mixture. Stir in dry ingredients. Fold in raisins and walnuts. Do not over mix.

Divide mixture among muffin cups. Bake 25-30 minutes.
