1½ LB Elbow Noodles
Salt
3 Poblano Peppers
Olive Oil
Chopped Onion
1 Jalapeno- Minced
Garlic -Minced
Black Pepper
1 tsp. Red Pepper Flakes
2 tsp. Fresh Oregano Leaves
1 Cup Mexican Creama

Directions:

Cook noodles- Reserve 1 cup of pasta water after noodles cooked and drained.

Broil 3 poblano peppers in oven, Turn peppers after a few minutes until blackened on both sides. Put peppers in plastic and wrap or a paper bag to steam for 5 minutes. Once cooled ,remove blackened skin, steam and seeds. Dice pepper.

Heat in a pot with olive oil, onions, salt. add jalapeno,and cook 2 minutes before add garlic.Season with chilie flakes,oregano, salt and pepper.

Remove pot from heat and add cooked pasta, poblanos and crema.
Adjust consistency with reserved pasta water if needed.
