Pie Crust for one Double Crust Pie or Two Single

2 cups Flour
4 Tbs Sugar
1 tsp Salt
1/2 cup Butter chilled and cubed
1/3 cup Crisco
1 Tbls Lemon Juice
5 Tbls Water

Directions:
Directions:
Mix together flour, sugar and salt. Cut into flour mixture Crisco and butter with pastry blender. Add lemon juice and water forming dough into a ball, cut in half. Using a rolling pin roll out dough ( I place dough between two sheets of saran to make it easier to handle) roll out a few inches larger than your pie pan. For single crust shape the edge pinching with your fingers. Or for fruit pie leave an extra amount of crust around the edges hanging at least 2 - 3 inches. Place prepared fruit in pan and top with extra ball of crust sealing the edges.

For a fruit pie such as apple, slice apples and add cinnamon, 1/4 cup of cornstarch or 1 cup of flour, 1 Tbls of lemon juice and one cup of sugar. I like to mix apples such as granny smith, gala, winesap and honey crisp for the different flavors.

For a peach pie follow the above but eliminate the cinnamon and add 1/3 cup of cornstarch instead. Fruit such as peach or berry will need the extra cornstarch to thicken and possible extra sugar too.
