1 pkg. Minute long grain and wild rice cooked to package directions
2 bunches broccoli, cooked
1 can mushrooms, drained
6 large slices Velvetta cheese or small jar Cheese Whiz
1 can cream of chicken soup
1½ cups croutons

Directions:
Directions:
Make 2 layers of rice and broccoli in a casserole. Top with mushrooms, then cheese. Spread soup over top. Sprinkle with croutons. Bake at 350 for 1 hour
Linden and I do not eat mushrooms so I leave them out. Can be replaced with a little chopped onion, celery, and red pepper.
