3c thinly sliced onions (about 4 med)
2 cloves garlic, crushed
2T olive oil
2 lbs. tomatoes
1 1/2tsp salt
2 T chopped parsley
1/2tsp dried basil
1c grated Swiss cheese (about 1/4 lb)
2 T grated Parmesan cheese
4T butter
2 1/2lb potatoes
pepper
1/4 tsp dried oregano

Directions:
Directions:
Saute onions and then garlic in oil until tender.

Peel tomatoes, cut in half and squeeze out seeds, drain upside down. Then dice.
Add to onions along with salt, pepper, parsley, basil and oregano, Mix gently.

Peel potatoes, cut in very thin slices. Butter shallow 3qt casserole pan.
Spoon 1/3 of tomato/onion in bottom. Add 1/2 of the potatoes some salt and pepper plus
1/2c Swiss cheese and 1T Parmesan. REPEAT. top with tomato/onion mixture.

Dot with 2T butter.

Bake 2hrs till potatoes are tender 325*

I was in Jr High when mom started making this. (Biloxi MS) She didn't say if the casserole should be covered or not when baking. She also would have made it from memory most of the time....these amounts and directions are what she gave me when I was a young bride.
