5 eggs separated
1 cup icing sugar
2 tbsp flour
2 tbsp cocoa
½ pint whip cream, whipped and sweetened

Beat egg whites until very stiff. Beat egg yolks until thick and lemon-coloured. Gradually add icing sugar, beating in well. Mix flour and cocoa together. Gradually beat into egg yolk mixture. Fold in egg whites (don't beat, mix with rubber spatula). Beat on high for 4½ minutes. Cover light cookie sheet with wax paper. Pour batter into pan spreading evenly. Bake at 400ºF for 10 min. Sprinkle tea towel with icing sugar. When cake is done turn over on tea towel and peel off wax paper. Cool. Spread whip cream and roll up and ice.
