1 ½ cups vegetable oil
2 cups sugar
3 eggs
3 ½ cups self rising flour
2 teaspoons cinnamon
1 cup chopped pecans
3 cups raw diced apples-peeled

Combine oil, sugar, and eggs and beat until creamy. Gradually add flour to mixture. Add vanilla and cinnamon and mix well. Fold in nuts and apples. Bake in greased bundt pan at 350 for 55 minutes. Suitable for freezing.
Recipe actually calls for using 9 x 13 pan, I have always used bundt pan but if you don’t have one, you can use 9 x 13 pan.
