3 eggs
1 c oil
2 c sugar
1 T vanilla
2 c shredded zucchini
2 1/2 c flour
1/2 c cocoa
1 tsp salt
1 tsp baking soda
1/2 tsp baking powder
1 tsp cinnamon
3/4 c nuts

Directions:

Mix all ingredients together.
Pour into 2 greased loaf pans.
Bake at 350 about 1 hour (if using glass pan, may need to turn down heat)

When I planted zucchini in our garden at the lake, I needed a way to use them all up! I called Mom to get this recipe as she had gotten it from Linda Volker while living in Herman. It's a tasty way to use zucchini!
