4 small tilapia fillets, about 1 3/4 lbs
salt and pepper 1/2 tsp each
2Tbsp olive oil, divided
1 cup white rice
1 Tbsp lime juice
1 tsp honey
1/4 tsp salt
1 jalapeņo
2 scallions
1 orange
1 grapefruit
1 avocado

Directions:
Directions:
1. Cook rice per package directions. In a large bowl, whisk together lime juice, honey and salt; stir in jalapeņo (thinly sliced) and white parts of scallion (thinly sliced). Set aside green parts of scallion, (thinly sliced).
2. Cut away and peel pith of orange and grapefruit. Cut citrus into small pieces and gently toss in dressing along with avocado (diced).
3. Heat large skillet on medium high. Season tilapia with 1/2 tsp each salt and pepper. Add olive oil to skillet and cook 2 fillets until golden brown, about 4 minutes. Flip and cook until opaque throughout, 1 to 2 min. Transfer to plate and repeat with another Tbsp olive oil and remaining tilapia. Serve fish over rice; top with salsa and reserved scallion greens.
