1 lb package penne noodles (can also use macaroni or shells)
4 tbsp unsalted butter (plus more to grease baking dish)
4 tbsp all-purpose flour
1 tbsp plus 2 tsp. kosher salt (divided)
1/2 tsp ground black pepper
1/4 tsp garlic powder
1 1/2 cups heavy cream
1 cup milk
4 cups sharp cheddar cheese (grated and divided)
2 cups jack cheese (grated and divided)

Directions:
Directions:
Boil water with the salt in a medium-large sauce pan, add the pasta of choice and cook until done but not mushy, or over cooked. While pasta is cooking, make the cheese sauce by melting the butter in medium sauce at low heat. Add the flour and stir until combined and smooth making a roux. Slowly add the warmed milk, cheese and the rest of the ingredients, stirring with a whisk until combined and cheese is melted. When pasta is done, drain and put in a large bowl (do not rinse). Pour the cheese mixture into the warmed pasta. Pour pasta into a casserole dish, top with bread crumbs or Panko and bake at 350 until bread crumbs are browned.

One of the most common requests we have received has been for a healthy mac and cheese recipe. So, how do you make a healthy mac and cheese? Here’s how we did it:

Use butternut squash, Greek yogurt, Parmesan cheese, and chickpea flour to make a creamy “cheese sauce”
Use gluten-free, refined flour free, high fiber, high-protein noodles instead of regular macaroni noodles
Replace refined all purpose flour with chickpea flour to thicken the sauce
Use plain Greek yogurt to add tartness, creaminess, and thickness to replace a lot of the cheese
Remove all the butter
Replace whole milk and/or heavy cream with a combination of unsweetened almond milk and low sodium chicken broth
Replace breadcrumbs with almond meal
