6 cups peeled, pitted and sliced peaches
2 tbsp fresh lemon juice
¼ cup all purpose flour
⅔ cup plus 1 tbsp sugar
¼ tsp salt
pinch ground nutmeg
2 tbsp unsalted butter
single crust 9" pie crust
1 egg, beaten with 1 tsp water

Preheat oven to 425º. Place the peaches in a large bowl. Sprinkle with the lemon juice and toss to coat well. In a bowl stir together the flour, ⅔ cup sugar, salt and nutmeg. Add to the peaches and toss to combine. Fill the pie dish with peach mixture and dot with bits of butter. Put pastry crust on top. Flute edges and cut vents. Brush entire crust with egg wash. Sprinkle the 1 tbsp sugar on top. Bake for 25 min. Reduce heat to 350º and bake until the juices are bubbly and the top is browned, about 25 min longer.
