1¼ c Buttermilk
2 TBSP oil
1 c. Flour
1 Tbsp Sugar
2 tsp Baking Powder
1/2 tsp Baking Soda
1/2 tsp Salt

Directions:
Directions:
The key to making light and fluffy pancakes with this recipe is whipping the eggs till they are very frothy. I use the KitchenAid mixer on high. Then add the buttermilk and oil.
Combine all dry ingredients and mix well.
Add to liquid ingredients.

When we lived in Derry, NH in the early '90s, I would always make these after church and Bobby, Bobbie, Denyse, and Tim would come over for breakfast.
