Pumpkin Roll Recipe

3/4 cup flour
1/2 tsp baking powder
1/2 tsp baking soda
1/2 tsp cinnamon
1/2 tsp cloves
1/4 tsp salt
3 eggs
1 cup sugar
2/3 cup pumpkin

8 oz cream cheese (softened)
6 TBS butter (softened)
1 cup powdered sugar
1 tsp vanilla

Preheat oven to 375
Grease and flour a 15x19 inch jelly roll pan
Prepare a dish towel by coating it in powdered sugar
In a large bowl sift together dry ingredients
Beat in eggs, sugar, and pumpkin
Stir until well incorporated
Spread mixture into prepared jelly roll pan
Bake for 13 minutes or until cake feels spongy
Immediately turn cake over onto prepared dish towel
Roll the cake and towel together long ways
Let cool like this on wire rack

Prepare Filling:
Cream together cream cheese and butter
Slowly add in powered sugar and vanilla

When the cake has cooled completely unroll from dish towel
Spread filling inside and roll back up
Wrap in the roll in plastic wrap and tin foil and freeze until serving
